
Ingredients:
1 -1 1/2 lb. Italian Sausage (mild, sweet, or spicy – your preference) crumbled
4-5 medium Yukon Gold Potatoes – cut into bite-sized pieces, leave skin on
1 medium onion – chopped
3-4 cups kale – torn into bite-sized pieces, stems removed
1 cup half and half
4 cups chicken stock
½ teaspoon crushed red pepper (more or less to taste – it’s spicy)
Shredded or shaved parmesan cheese (optional)
Cook sausage in a large pot until brown. Drain grease if needed. Add onion, crushed red pepper, and chicken stock, bring to a boil. Cook for 10 minutes and then add potatoes. Cook another 10-15 minutes and then add kale. Cook 5 more minutes, turn off heat, and add half and half. Heat through briefly, stir and serve topped with parmesan cheese.
